Use of pans up to 24 cm

The right pan size is crucial.

The size of the pan plays an important role when frying:

  • The diameter of the pan determines how much you can cook in it. If you cook food in a pan that is too small, it may not heat evenly.
  • A large frying pan, on the other hand, usually requires a larger cooking zone and therefore consumes more energy. For small portions, it's often unnecessary to use a 28 cm frying pan or even a larger one like a Fissler wok with a diameter of up to 32 cm. A medium-sized 24 cm frying pan is frequently sufficient.

Pan diameter or cooking surface size – what is being measured?

The diameter of the pan and the cooking surface, also called the pan's surface area, are not the same size: The diameter is measured at the upper inner edge so that lids fit universally. Due to the shape of the pan, it is often larger than the cooking surface. For example, a 20 cm diameter pan has a cooking surface of approximately 18 cm.

If you have a conventional stovetop, you should make sure that the size of the pan's base matches the size of the chosen burner. If the base is too large, the pan may heat unevenly. Conversely, if it's too large, valuable energy will be wasted.
